



Jamaica (pronounced ha-MY-kah) is dried hibiscus flower, and it makes a stunning, tart agua fresca that's a feast for the eyes and the palate.
Steep it strong, then sweeten and dilute to taste.
Bring 4 cups of water to a boil, add the hibiscus, and simmer 5 minutes. Steep off the heat for 15 minutes.
Strain out the flowers, stir in the sugar while warm until dissolved, then add the lime juice.
Add the remaining 4 cups of cold water, adjust sweetness, and refrigerate until cold. Serve over ice.
