



This is our house sauce — the bridge between the pit and the masa. Chipotle brings smoke and warmth without overwhelming heat.
Simmer it low so the flavors meld and the sauce thickens naturally.
Whisk all the ingredients together in a saucepan over medium heat.
Bring to a gentle simmer and cook 20–25 minutes, stirring often, until thickened and glossy.
For a smooth sauce, blend it; leave it as-is for a little texture from the chipotle.
Cool completely and refrigerate. It keeps for two weeks and deepens in flavor.

Adjust the heat by adding chipotles one at a time — they pack a punch, and you can always add more but can't take it back.
